Vegan soup with dumplings is a tasty vegan soup recipe. To tell the truth, it is just a vegetables soup recipe that is perfectly complemented by dumplings. As everyone knows, dumplings are flour products that are usually made from flour and eggs, but in my recipe, of course, we will use vegan dumplings that are made from durum wheat and water. I bought ready-made dumplings in the store, but if you are willing to and some spare time, you cook them yourself. Dumplings can be found in cuisin of different countries of the world, the only difference is in naming. Vegan dumplings are not necessarily a soup ingredient, you can also cook them separately.
And now it is time to move on to the recipe.
– 200gr. mushrooms;
– 1 large carrot;
– 3 cloves of garlic;
– fresh dill;
– 100 gr. dumplings ;
– 1 tsp. curry;
– salt and pepper (to your taste).
Now we proceed to step-by-step cooking (note: your soup pot must be 2.5 litres):
- Wash carrot and mushrooms. Clean carrots and cut them into rounds or strips. Put them in the pot. Cook carrots on a quiet fire with oil. Don’t forget to add a little water. Add curry, salt and pepper to the mix.
- Cut the mushrooms and send them to the carrots. Stir carefully and pour to the mixture water. Look forward when the water begins to boil.
- As soon as the water boils, add the dumplings and cook the soup for 10 minutes more. Meantime chop greens and garlic. Cut garlic or press it with a garlic crusher. After 10 minutes turn off the fire, add greens and garlic, stir and let the soup draw.

P. S Of course, you can replace the ingredients that are present in my recipe with any other that you love, either the ones that you have in your fridge. If you want to, you can change it to any other warming spices such as garam masala.
