To be honest, I think this omelet recipe is one of the best vegan omelets I have ever cooked. It’s soft, it’s fluffy, and it’s naturally melting in your mouth! I totally recommend you to try this.
– 1 cup chickpea flour;
– 1/2 tsp salt;
– 1/4 tsp each of turmeric, garlic powder, black salt, baking soda, paprika;
– 3 Tbsp vegan mayo;
– 1 1/4 cup water.
– veggies of your choice
Let’s begin with the filling. As I had some tomatoes lying around in the fridge I decided not to let them go to waste and use them as the omelet’s filling.
So, the first thing would be to cut veggies and fry them. While veggies are being fried begin to cook the omelet’s mixture. Mix together all ingredients and blend them. This procedure usually takes no more than one minute.
Pour the mixture into a pan and cover it. Cook for 5-7 minutes.
Serve Fluffy Chickpea Vegan Omelet with greens, sesame seeds or other seeds. Don’t forget to add to our vegan omelet some fresh vegetables salad. It’s such a fantastic breakfast!
