As I haven’t cooked desserts for quite a long time, I made up my mind to straighten this out and do it! This time I’m going to intoduce you a very interesting chia seeds pudding recipe. Chia seeds are an excellent source of antioxidants (they help lose weight), they are also rich in calcium (five times richer than milk, chia seeds contain twice more protein than any other seeds or grains), they contain a lot of omega-3 and omega-6 (which must be present in the diet every day) and help reduce the pressure and stabilize blood sugar levels as well. In general, this is not only delicious, but also a super healthy dish.
Ingredients are for 2 persons.
– 2 Tbsp chia seeds;
– 100 ml. any kind of vegetable milk;
– 100 gr. raspberry;
– 2 bananas;
– can of coconut milk (it should be in the refrigerator for a day).
I decided to make a 2-layer pudding. Let’s begin with the first one. The first layer is a layer made of chia seeds. Pour chia seeds out in a bowl, add milk and stir it. Put the mixture in the refrigerator for 20 minutes. In the fridge the seeds will soak the milk up and swell.
To make the second layer you should mix raspberry and banana. Take 100 gr. frozen raspberries and 2 bananas, put them in a bowl and blend until they become smooth. If raspberries are a little bit sour, add a teaspoon of sugar.
The third and final layer is the layer made of coconut milk which you turn into whipped cream! How do you do it? It’s very simple. Put the can of coconut milk in the fridge for a day. Then take it out and open it. You’ll see the oil at the top of it that you should carefully remove.
Now there are two options to make a topping:
- You can whip the top with a wire whisk, add powdered sugar and put it back in the refrigerator.
- Or you can put the oil into the cookie press and make a topping!
The pudding turns out to be a very solid and tasty dessert. I like that it doesn’t cloy and you can feel the taste of each ingredient. Bon appetit = ^ _ ^ =
