There are many varieties of burrito. However, the only actual difference of all of them is the filling. Today I will introduce you a new nutritious breakfast recipe – vegan burrito! We will replace scrambled eggs that are traditionally added to the filling with tofu. The rest of the ingredients make a vegan burrito tasty and nutritious.
– 4 tortillas;
– a pack of tofu;
– 3/4 tbs. of salt + 1 tbs. sea salt;
– 1 tbs. black pepper;
– 1/2 tbs. turmeric;
– 3 Tbsp. olive oil;
– 1 tomato;
– 2 Tbsp. parsley;
– juice of a half lime;
– a pinch of salt;
– a pinch of pepper;
– Bank of red beans
– 1/2 tbs. red pepper;
– 1 avocado.
First of all, we need to dry tofu and then crush it with a fork. Add 3/4 tbs. salt and one tbs. pepper. Mix thoroughly. Then proceed to the preparation of pico de gallo. Chop tomatoes (you will not see it at the photo below because unfortunately I forgot to buy it ^^) and mix it with parsley, lemon juice, sea salt and pepper. Peel the avocado and blend it. Here what we have:
Now we’re gonna cook the beans. Pour liquid out and cook them at low heat with red pepper.
Now proceed with the tofu. You need to warm it up with olive oil and turmeric. Cook for 2 minutes maximum. It is necessary that the tofu absorbes the oil. Displace it in a different bowl. Prepare the filling made of all those separately prepared ingredients.
Take a tortilla and grease it with the blended avocado. Then add a tablespoon of beans, tofu, and then on the top of it the pico de gallo sauce.
Place the burrito on the frying pan. We do it so that tortilla will crunch. Bon appetit = ^ _ ^ =
